Cheese in the can is not effected by handling and movements, maintaining its original flavor due to the aroma seal.
Nitrogen keeps the product fresh without altering its organoleptic properties. Nitrogen is naturally found in our atmosphere.
Flavor and aroma are not altered because the cheese is submerged in nitrogen and not in contact with plastic!
